The Food Technology Centre

As part of the Food Processing Lab, the ‘Food-Technikum’ is a central research and development centre specialising in the investigation and optimisation of mechanical, thermal and microbiological processes in food processing. Innovative processes for the production of preliminary products and foodstuffs are researched and developed here. Another focus is on the development, commissioning and optimisation of prototypes for systems used in food production. For example, a ‘chestnut sorting system’ was developed here, which automates tedious, physically strenuous sorting activities.

In addition to research and development projects, the ‘Technikum Food’ also plays an important role in academic teaching. Students gain practical insights into the latest technologies and processes in food production. Various seminars and workshops are also held at the technical centre.

Focus on brewing

The Food Processing Lab also carries out intensive research and experiments on the subject of beer. The technical centre has small brewing plants in which various experimental beers are brewed. We try out different sample batches such as pseudocereals or raw fruits and also different yeast strains to investigate their influence on the flavour and quality of the beer. We also work with specific methods for determining various analytical parameters in beer.

Our research in the Food Processing Lab thus covers both the technical challenges of brewing plant construction and the chemical-analytical aspects of beer production. Through this holistic approach, we contribute to the development of innovative solutions and processes for the brewing industry.
